Vegetables are great, but they can’t meet all the nutritional (or taste) needs of a plant based diet. Adding other components make a plant based diet so much more interesting and tasty, but also provide essential nutrients that we tend to think we need from animal products–protein, calcium, iron, zinc, Omega-3, and other vitamins. Eating a wide variety of vegetables, plus other plant foods can meet all of our nutritional needs, (except for vitamin B-12, which is the only vital nutrient found in animal products. If eating a vegan diet, a B-12 supplement is needed).
